Kids and a Mom in the Kitchen #71: Zebra Pudding

Time for Kids and a Mom in the Kitchen
(A weekly linky to share what you and your children have created in the kitchen.)

This week our Kids and a Mom in the Kitchen time comes straight out of the My Father's World curriculum. We are learning about Z: Zebra and there is a recipe for Zebra Pudding in the teacher's manual. I have never made pudding without a boxed mix, so this was something new for all of us.

Ingredients:
(The following amounts have been doubled, as the amounts listed in the book wouldn't be enough for 6 people.)

6 Tbs cornstarch
4 cups milk, divided
1/2 cup honey
2 tsp vanilla
1/4 cup chocolate chips


(In case you are wondering about the muscles, headbands and towel, they had just watched an episode of The Magic School Bus earlier in the day where they learned about the importance of exercise and had been working out to get their oxygen to their muscles.)

Now, back to the recipe.

We mixed 3 1/2 cups of milk and the honey in a saucepan and cooked it over medium heat.



The older girls took turns stirring the mixture.


Meanwhile Hannah and Harold helped mix the cornstarch and 1/2 cup of milk in our glass measuring cup.



Stirring the cornstarch/milk mixture helped keep Harold occupied while we waited for the milk and honey mixture to to get close to boiling.



When the milk/honey mixture was almost boiling...


...I added the milk/cornstarch mixture to the pan and stirred constantly until it began to boil.


It thickened up really fast.


I then removed it from the heat and added the vanilla. Half of the pudding (2 cups) was put back into the measuring cup.


And we added the chocolate chips to the pudding in the pan.


We stirred until the chips were melted.



While it was still warm I poured it into 5 sundae cups plus one bowl, alternating the chocolate and vanilla to look like zebra stripes.




Recipe:
Mix 1 3/4 cups milk and 1/4 cups honey in a sauce pan and cook over medium heat, stirring often.
While milk/honey mixture is cooking, mix 1/2 cup of milk and cornstarch.
When the milk/honey mixture is almost boiling add the milk/cornstarch mixture to the pan. Stir constantly until it begins to boil.
Remove from heat and add 1 tsp of vanilla. 
Pour half (2 cups) pudding back into measuring cup.
Add 1/4 cup chocolate chips to pudding in the pan and stir until they melt. 
While the pudding is still warm, pour into glasses, alternating chocolate and vanilla to look like zebra stripes.
Let pudding cool in the refrigerator.

From My Kitchen: Cheesy Broccoli Meat Pie

Last week I wanted to do something different for dinner. As I was sitting on the couch I thought of using rice to make a crust for a meat and veggie mixture pie. This is what I came up with. Hubby says it is a "keeper" recipe.

Ingredients:
Cooked Rice
20 oz pkg Ground Turkey
1 can cream of broccoli soup (ignore the second can in the picture, I thought I was going to need it)
3 cups raw broccoli 
Shredded Cheddar Cheese
Minced onion
Garlic powder
Pepper


I made extra rice because I wasn't sure exactly how much it was going to take. Half of this would probably do. This is how I make my rice. 
Place 4 cups cold water in sauce pan.
Add 2 cups rice, 2 Tbs butter, 2 tsp salt. 
Bring to a boil. 
Once it is boiling, stir once, cover with tight fitting lid, turn stove to low and simmer for 20 minutes. 


While the rice was cooking I fried up the turkey and minced onion. I do not measure the minced onion, I just sprinkle a whole bunch on, as you can see in the following picture. I also sprinkled on some ground pepper and garlic.



At the same time cook the broccoli by putting it in a pan with some water. Bring the water to a boil, reduce heat to medium, cover and cook for 10 minutes.


When the turkey is fully cooked, drain grease if necessary.


Add soup.


Add 1/2 cup cheese


Add cooked, drained broccoli and stir it all together.


When rice is done it will be nice and sticky. Allow it to cool off for a few minutes and then press enough into a pie dish sprayed with cooking spray to form a crust. 


Add meat mixture.


Sprinkle with more cheese.


Cook at 350 degrees for 25 minutes.

Delicious Dish Tuesday: Marvelous Menus from the Homemaker's Mentor CD Featuring Italian Breaded Chicken

It has been a while since I have participated in Delicious Dish Tuesday. That would be because I haven't really been making anything new lately. However, there are so many yummy looking recipes in the Homemaker's Mentor CD that I thought it would be great to share some with you. I did share the Frosted Mocha Cookies last week for Kids and a Mom in the Kitchen and there are many other cookie recipes in this wonderful resource.  However, there are a variety of other recipes contained in the collection. Some are complete meals. I decided to try one of the "Amazing Simple Recipes" featuring Breaded Italian Chicken, Cheesy Red Rice with Olives, and Garlic Toast. The vegetables were to be Garden Fresh Green Beans and a Tossed Green Salad. Finishing off the menu was Southern Iced Tea. 

The Breaded Italian Chicken calls for:

3 pounds of boneless skinless chicken
2 1/2 cups homemade bread crumbs
1/2 cup Parmesan cheese
1 Tbs dried Parsley Flakes
1 heaping tsp Italian Seasoning
1 tsp Garlic Salt (I always use Garlic Powder)
1/2 tsp black pepper
You also need melted butter to dip the chicken in. 



I used my Magic Bullet to make my bread crumbs from whole wheat bread. Then I added all the seasonings and stirred. 


I dipped the chicken in the melted butter (about 1 stick of butter melted in the microwave), then I rolled it in the bread crumb mixture. I sprayed my baking pan with cooking spray and baked the chicken for approximately 45 minutes on 375 degrees.


While the chicken was cooking I made the rice. I have to say, I would never have thought of making rice this way. I am so glad I found this recipe. It was delicious.

2 1/2 cups white rice
1 can diced tomatoes with juice (do not drain)
1/4 cup olive oil
1 Tbs fresh minced garlic (I use my garlic press)
1 tsp salt
4 1/2 cups water
1 cup sliced black olives
2 bouillon cubes
1 Tbs parsley flakes 
2 cups shredded Jack and Cheddar


This is so simple. You just put all the ingredients, except the cheese, in the pan and stir. Put it on medium heat and cover. Let cook undisturbed for 18 minutes then remove the lid, stir and add cheese. I did feel it was still too watery after 18 minutes, so I cooked it an additional 5 minutes and it was perfect.


When the chicken came out of the oven I made some Garlic Toast. 

French or Italian Bread Sliced into 1 inch slices
Softened butter
Parmesan Cheese
Garlic Powder
Parsley Flakes


I just spread the bread with the butter, added the Parmesan cheese, garlic powder and parsley flakes. Then I put it under the broiler for about 1 1/2 minutes. I did burn the first batch as 1 minute wasn't quite long enough and I forgot to set the timer when I put it back in. The second batch turned out really well.


I just used canned green beans as I do not have green beans in my garden. I did add some butter and seasoning salt though to change it up a bit. We also didn't do the salad or the iced tea as it was getting so late.
