Breakfast for Dinner Thursdays March 24th, 2011

Tots and Me

I have been so busy I almost forgot to post.
This week we had what I am calling Oatmeal Pancakes.  I found this recipe over at Montessori Tidbits.  I decided it has to be healthier than white flour.  You take oats, I used old fashioned oats, and you "grind" them up.  I used my magic bullet, she used a blender.  It was definitely a different consistency than what we are used to.  I felt my son's tasted just a little better actually.  He has to use Soy Milk as he is allergic to milk (poor thing) and the kind we had on hand was vanilla flavored.  
Because this recipe calls for egg whites, I scrambled the yolks up (with the two batches there were 8 of them, I wasn't going to waste) and we ate them.  This is what we do in the mornings when Steven and/or I have egg white sandwiches.  The girls get the yolks. None of them are in danger of being over weight.

  1. I love breakfast for dinner. Haven't done it in a long time. Usually eggs over easy, with whole wheat toast no butter, and turkey bacon.
