Kids and a Mom in the Kitchen #113: Beef and Noodle Stew

I apologize for not having posted a Kids and a Mom in the Kitchen for a while. I have to say, I didn't realize it had been a month. My motivation has not been where it should be lately, and we just haven't been in the kitchen the same way we have in the past. One of the problems is that it gets a bit stressful trying to have all four of the children in the kitchen together. I have decided that I will have the older girls help me with some harder recipes one week, and then have the younger children help out with simple ones. There may be a time when we will all work together if the recipe is part of our lesson.

For today's Kids and a Mom in the Kitchen, I am sharing a recipe of my own creation. I have always struggled with making stew. I just can not make it the way my mother did. Granted, it still isn't the same as mom's, but it is quite tasty. When hubby says it is a "Keeper Recipe," it must mean we found or created something really yummy.

Here is what you will need:
Ingredients:

Stew Beef, cut into bite sized pieces
Flour for coating beef
Salt, pepper, and garlic powder (to season flour)
1 Tbs butter
6 carrots, sliced
1/2 bag Wide Egg Noodles
8 cups water
8 beef bouillon cubes
4 Tbs cornstarch
minced onion

While mommy cut the beef into bite sized pieces...


...Tabitha peeled the carrots.  She attempted to slice them, but we were in a rush, so mommy took over.


I don't measure the flour. I just use enough to coat the beef, and add salt, pepper, and garlic powder.  


I had Tabitha help coat the beef while I finished slicing the carrots.


The importance of  washing your hands after touching raw meat was discussed.


Heat the pan on medium-high heat. Place butter in heated pan.
(No, this pan was not heated first. As I mentioned, we were in a rush as daddy was headed to work, and I forgot.)


Toss in the beef and let it cook for a few minutes. Then stir it up to make sure it is cooking evenly.


While it was cooking, Amelia came in and helped Tabitha unwrap the bouillon cubes.


When the meat is almost cooked through, add in 8 cups of water, plus the bouillon cubes, carrots and minced onion. I do not measure the minced onion, I just sprinkle a bunch on the top.



After the water has come to a boil, add the egg noodles and cook according to package directions. 



Mix 4 Tbs cornstarch with 4 Tbs water.


Turn heat to low. Add cornstarch mixture to stew and stir until thickened. 




Directions:

1- Coat beef with seasoned flour.
2- Heat pan on medium-high heat.
3- Place butter in heated pan, toss in beef, and let it cook for a few minutes, then stir up and make sure it is cooking evenly.
4- When beef is almost cooked through, add 8 cups of water, bouillon cubes, minced onion, and carrots. 
5- After the water has come to a boil, add noodles and cook according to package directions.
6- Turn to low.
7- Mix 4 Tbs cornstarch with 4 Tbs water, add to stew and stir until thickened.

Kids and a Mom in the Kitchen #71: Zebra Pudding

This week our Kids and a Mom in the Kitchen time comes straight out of the My Father's World curriculum. We are learning about Z: Zebra and there is a recipe for Zebra Pudding in the teacher's manual. I have never made pudding without a boxed mix, so this was something new for all of us.

Ingredients:
(The following amounts have been doubled, as the amounts listed in the book wouldn't be enough for 6 people.)

6 Tbs cornstarch
4 cups milk, divided
1/2 cup honey
2 tsp vanilla
1/4 cup chocolate chips


(In case you are wondering about the muscles, headbands and towel, they had just watched an episode of The Magic School Bus earlier in the day where they learned about the importance of exercise and had been working out to get their oxygen to their muscles.)

Now, back to the recipe.

We mixed 3 1/2 cups of milk and the honey in a saucepan and cooked it over medium heat.



The older girls took turns stirring the mixture.


Meanwhile Hannah and Harold helped mix the cornstarch and 1/2 cup of milk in our glass measuring cup.



Stirring the cornstarch/milk mixture helped keep Harold occupied while we waited for the milk and honey mixture to to get close to boiling.



When the milk/honey mixture was almost boiling...


...I added the milk/cornstarch mixture to the pan and stirred constantly until it began to boil.


It thickened up really fast.


I then removed it from the heat and added the vanilla. Half of the pudding (2 cups) was put back into the measuring cup.


And we added the chocolate chips to the pudding in the pan.


We stirred until the chips were melted.



While it was still warm I poured it into 5 sundae cups plus one bowl, alternating the chocolate and vanilla to look like zebra stripes.




Recipe:
Mix 1 3/4 cups milk and 1/4 cups honey in a sauce pan and cook over medium heat, stirring often.
While milk/honey mixture is cooking, mix 1/2 cup of milk and cornstarch.
When the milk/honey mixture is almost boiling add the milk/cornstarch mixture to the pan. Stir constantly until it begins to boil.
Remove from heat and add 1 tsp of vanilla. 
Pour half (2 cups) pudding back into measuring cup.
Add 1/4 cup chocolate chips to pudding in the pan and stir until they melt. 
While the pudding is still warm, pour into glasses, alternating chocolate and vanilla to look like zebra stripes.
Let pudding cool in the refrigerator.

From My Kitchen: Cheesy Broccoli Meat Pie

Last week I wanted to do something different for dinner. As I was sitting on the couch I thought of using rice to make a crust for a meat and veggie mixture pie. This is what I came up with. Hubby says it is a "keeper" recipe.

Ingredients:
Cooked Rice
20 oz pkg Ground Turkey
1 can cream of broccoli soup (ignore the second can in the picture, I thought I was going to need it)
3 cups raw broccoli 
Shredded Cheddar Cheese
Minced onion
Garlic powder
Pepper


I made extra rice because I wasn't sure exactly how much it was going to take. Half of this would probably do. This is how I make my rice. 
Place 4 cups cold water in sauce pan.
Add 2 cups rice, 2 Tbs butter, 2 tsp salt. 
Bring to a boil. 
Once it is boiling, stir once, cover with tight fitting lid, turn stove to low and simmer for 20 minutes. 


While the rice was cooking I fried up the turkey and minced onion. I do not measure the minced onion, I just sprinkle a whole bunch on, as you can see in the following picture. I also sprinkled on some ground pepper and garlic.



At the same time cook the broccoli by putting it in a pan with some water. Bring the water to a boil, reduce heat to medium, cover and cook for 10 minutes.


When the turkey is fully cooked, drain grease if necessary.


Add soup.


Add 1/2 cup cheese


Add cooked, drained broccoli and stir it all together.


When rice is done it will be nice and sticky. Allow it to cool off for a few minutes and then press enough into a pie dish sprayed with cooking spray to form a crust. 


Add meat mixture.


Sprinkle with more cheese.


Cook at 350 degrees for 25 minutes.
