Littles Learning Link Up: August 15, 2017: Featuring Our Australian Meal


 Each month you will find:

What have we been up to?

We have officially finished our My Father's World ECC year! We didn't quite get all the activities done that I hoped to, but we read lots of books (as usual), watched a couple of movies, and even had a "leaving the country" meal, complete with a Kids and a Mom in the Kitchen time. 

You can see a partial list of the books we read on Australia and Coral Reefs on my first Picture Book Saturday (on a Monday) post. I completely forgot to post this week's Picture Book Saturday as I am still trying to get into the routine, but I plan to share the rest of the books we read on Australia and Coral Reefs this coming weekend. 

The movies we watched were: The Rescuers Down Under and Blinky Bill the Movie (a never before heard of character for us). I was looking for a movie about kangaroo that I watched many years ago but couldn't remember the name. Found Kangaroo Jack thinking it was the right one. Started watching it, realized it wasn't the same movie, read reviews real quick, and promptly turned it off and searched for another movie. 


For our meal, I made four different dishes, utilizing three books. 


One of our curriculum books, A Trip Around the World, had a recipe for Australian Meat Pie. There was also a recipe for Damper Bread, but it called for self-rising flour which we don't have. So, I found a different recipe for the Damper Bread in Foods of Australia by Barbara Sheen. And in Cooking the Australian Way by Elizabeth Germaine & Ann L. Burckhardt, I found Sunshine Salad with Vinaigrette Dressing plus Glazed Kiwi Tart. 

As I was in a bit of a rush because daddy had to get to work, I made the Damper Bread and the Australian Meat Pie by myself. While the meat pie cooked, the children helped make the tart and the salad. 

Glazed Kiwi Tart


Ingredients:

1 9-inch unbaked refrigerated pie crust
1 8-oz package cream cheese (room temp)
2/3 cup sugar (I used 1/3 cup Pyure)
1 1/2 tsp vanilla extract
3 Tbs heavy cream
3 ripe kiwis
1/4 cup apricot preserves
1 Tbs water


I followed the directions for baking the pie crust while the children were occupied in other activities. Then I let it cool. After the meat pie was in the oven, I called the children to help with the tart.

Tabitha and Hannah started getting the glaze cooking by combining the apricot preserves and water in a small saucepan. We heated it on low.


While that was heating, we worked on the filling. We mixed together the cream cheese, Pyure, vanilla extract, and heavy cream.


I love that Amelia helped pour while the others held the spoons.



Harold and Hannah helped mix the filling together with the electric mixer.



And Hannah sort of helped spread the filling. I ended up taking over because the crust kept sliding and I was afraid it was going to break.



While all this mixing and stirring was taking place, the older girls were in the dining room cutting kiwi.


Then Harold and Hannah helped arrange it on the tart.


And mommy poured the "glaze" on top. As you can see, it wasn't quite glaze consistency. I think it ended up cooking too long while I was moving back and forth between children.

I recently started a new weekly feature called Fun Fiction Friday, where I share the books the older girls and I are reading, sharing their thoughts on the books, and possibly even a review of a Juvenile book I am reading. 

Last week I started Picture Book Saturday (though it posted on Monday). These posts feature the picture books we read during the week, with the children each sharing which one was their favorite. Last week I shared the books we had read about Australia and Coral Reefs.

Hoping to make both of these consistent, weekly features here on Tots and Me...Growing Up Together.

Littles Learning Link Up: February 23, 2016- Robin's Nests

What have we been up to?

Actually, I am trying to get us back on a decent schedule so I make sure we get all our work done. We haven't been doing any crafts, though we have made some of the yummy snacks that go with our curriculum, the latest being Robin's Nests, which we made when the older children were doing Kindergarten. When we made them a few years ago, we used the stove top. This time, I melted the ingredients in the microwave.

Here are the ingredients you will need:


The Grass- 2 Large Shredded Wheat biscuits
The Twigs- 2 cups chow mein noodles
The Mud- 1 cup semi-sweet chocolate morsels and 1 cup peanut butter

The children shredded the Shredded Wheat biscuits in a bowl.



Then we added the chow mein noodles




I placed the chocolate chips and peanut butter in a microwave-safe bowl (my big measuring cup) and placed it in the microwave.


I cooked it on medium heat at 30 second intervals until it mixed smooth.


Then I poured it into the grass/twig mixture and stirred.


I divided it between them, plopping some on a piece of wax paper. They then shaped it into nests.




Messy, messy...


Yummy, yummy...


I put them in the fridge to harden. They were a yummy dessert with dinner, complete with grapes for eggs.

Kids and a Mom in the Kitchen #114: Hamantaschen Cookies (From the My Father's World manual)

Time for Kids and a Mom in the Kitchen

Last week we were learning about Queen Esther with our My Father's World lessons. We got to make Hamantaschen Cookies for the first time ever, and I have to tell you, they were delicious. The cookie part is like a lemon sugar cookie and then we added some scrumptious filling.

This recipe comes from the My Father's World 1st Grade Curriculum: Learning God's Story Teacher Manual.  They have graciously given me permission to share the recipe here on my blog as a part of my Kids and a Mom in the Kitchen post.

Cookie Dough Ingredients:

3 Tbs butter
3 Tbs oil
3/4 cup sugar
1 egg
1/2 tsp grated or minced lemon rind
1 1/4 to 1 1/3 cups flour


The older girls helped to make the dough.


We creamed the butter, oil, and sugar together.



Then we grated the lemon rind.


We beat in the egg and lemon rind.


Then we added the flour. The recipe calls for 1 1/4 to 1 1/3. We found a 1 1/4 to be just right. I almost thought it was too dry, but it ended up being perfect. After we mixed the flour in, it was refrigerated for a few hours.

Then Mr. Harold helped mommy roll and cut out the dough. The instructions call for the dough to be rolled up to 3/8 inch thickness. I have to say, I am not very good at judging the thickness of dough. However, the cookies ended up perfect, so we must have done okay.

Then we put the cookie circles on the greased cookie sheet.




Then it was time for the filling.


The Teacher Manual ingredients for filling state we need:

Apricot jam
raisins or chopped dried fruit
nuts

As specifics weren't given, I came up with these amounts, and they were perfect. 

I used 1/4 cup of apricot preserves, plus a couple of tablespoons or so of dried diced plums and a couple of tablespoons or so of chopped walnuts.


Hannah helped with the filling.




We placed a teaspoon of mixture in the middle of each cookie.




Then I folded the sides up to make triangles, pinching the sides together so only a little of the filling showed.


We baked them in a 375 degree oven for 14 minutes. Recommended time is 12-15 minutes.  The bottoms were nice and golden brown.





Directions:

1- Cream butter, oil, and sugar.
2- Beat in egg and lemon rind.
3- Add flour as needed to make a stiff dough (1 1/4 cup was perfect for us).
4- Chill for several hours.
5- Make filling by combining jam, dried fruit, and chopped nuts (it should be thick).
6- Preheat oven to 375 degrees F.
7- Roll dough about 3/8 inch thick and cut into 3" rounds.
8- Place circles of dough on greased baking sheet. 
9- Place 1 tsp filling in the center of each.
10- Fold up three sides to form triangle. Pinch the edges together tightly so that only a little of the filling is visible. 
11- Bake for 12-15 minutes. Bottom will be golden brown.
