Delicious Dish Tuesday: Pineapple Stuffing

I was searching for a some good side dishes to go with our ham for Resurrection Sunday. I asked on Facebook and someone suggested Pineapple Stuffing. I had never heard of it, but had to do some research because it sounded really good. I found a recipe on allrecipes.com (no surprise there) and decided to try it. The dish ended up what we call a "keeper recipe" and hubby even asked me to make it again this weekend. I was glad to oblige. One, because I also loved it. And two, because that gave me the opportunity to take pictures to share with you!

Pineapple Stuffing

Ingredients:
1/2 cup butter, softened
1 cup sugar (can reduce to 3/4 cup)
4 eggs
1 (20 oz) can crushed pineapple, drained
5 slices white bread, cubed


First, cream the margarine (butter) and sugar.


Then, beat in the eggs, one at a time.


Then add the pineapple


And the bread cubes




Place in a greased 2 qt casserole


Bake for 1 hour. For the first 45 minutes bake covered with foil. 
For the remaining 15 minutes bake uncovered.

Let it sit for a few minutes to firm up.





I do have to say, I think I had it in for a little longer on Resurrection Sunday when I was busy trying to get everything else done. It seemed a little more done, and actually tasted better.

  2. Wow, this sounds great, I have never heard of it I usually make pineapples and cherries for my ham, I bet we could add the marischino cherries in with this and add to it. I am going to try it..
