From My Kitchen: My Spinach Lasagna Recipe (or zeeanna as Amelia calls it)

From My Kitchen: Spinach Lasagna

I have been meaning to share this recipe for a while and keep forgetting.

Ingredients:
12 lasagna noodles (cooked according to package directions)
2 (15 oz) containers ricotta cheese
1 egg
10oz pkg frozen chopped spinach (thawed and drained)
1 lb mozzarella shredded
1/2 cup cheddar shredded
1 jar (24oz) spaghetti sauce plus a little more for top


Cook noodles according to package directions for al dente.


In a large bowl combine ricotta, egg and thawed, drained spinach:



Drain lasagna noodles

Layer in 10x13 pan:

1 cup spaghetti sauce
4 noodles
1/2 ricotta mixture


1/3 of the mozzarella plus the cheddar
1 cup spaghetti sauce
4 noodles
remainder of the ricotta mixture
1/3 mozzarella
1 cup spaghetti sauce
4 noodles
and a thin layer of sauce to keep the noodles from drying out and getting hard while cooking.

Cover with aluminum foil
Bake in 400 degree oven for 40 minutes
Remove cover, add remaining mozzarella bake for an additional 10 minutes.
Remove from oven and let sit a few minutes. Serve

  3. Looks YUMMO, for me anyway, no one else would eat it with spinach in it in my house 8( But I would probably eat the entire thing..lol
