We were going to make a birthday cake for Jesus like we did last year, but we ran out of time. Instead, we decided to make a cake for New Year's. Last year Jesus's birthday cake was a white cake because I wanted it to represent purity. A couple of weeks ago I had found a great looking white cake recipe over at allrecipes.com because we didn't have a boxed mix. With all the baking we do from scratch we do still use boxed mixes as that is how I learned to bake a cake growing up. The way the children chowed down this cake I am thinking we need to make cakes from scratch more often.
(No, this is not a wheat-free recipe.)

Ingredients:

1 cup white sugar
1/2 cup butter, softened
2 eggs
2 tsp vanilla
1 1/2 cups flour
1 3/4 tsp baking powder
1/2 cup milk

We combined the sugar and softened butter and creamed them together. 

Then we added the eggs, beating after each one was added.

Next we stirred in the vanilla.

We set the creamed mixture aside.

In a separate bowl we combined the flour and baking powder.

Then we added it to the creamed mixture and mixed well.

We stirred in the milk and mixed until smooth.

We baked it in the oven at 350 degrees for 35 minutes

Then the hubby made a simple sugar icing with powdered sugar and milk.

He poured it on the cake and we let it firm up before eating.
