This recipe is one that I made a few weeks ago, not expecting it to turn out all that great as I was just trying to find a way to create a recipe with what I had in the house. Hubby ended up loving it. Unfortunately, I had not taken any pictures or written down the recipe, so I wasn't exactly sure how to recreate it. When I finally had some time the other day to sit down and concentrate (plus to brainstorm with hubby) I remembered how I made it. This time I took pictures and wrote down the recipe, so now I get to share.
Chicken Broccoli Tater Tot Casserole
Here is the ingredient list:
1 lb boness, skinless chicken breasts cut into bite-sized pieces
1 cup chicken broth
2 cups chopped broccoli
2 cans cream of broccoli soup
1 can of milk
1 cup cheddar cheese (plus extra to sprinkle on top to taste)
Muenster cheese
5-6 cups of frozen Tater Tots
I make my chicken broth using a bouillon cube in 1 cup of water, then I added the chicken and cooked for 12-14 minutes (until no longer pink).
Add the broccoli and cook 4-5 minutes more, until the broccoli is tender.
Add the soup, milk and 1 cup of Cheddar Cheese (If the water isn't all absorbed/evaporated you will need to drain it, but I have found that the water is all gone)
Stir and cook on low until heated through. Then transfer to a baking dish.
Add slices of Muenster cheese to cover. We get ours from the Deli, so we are able to get them nice and thin.
Top with 5-6 cups of Tater Tots.
(The first time I made this it only took 5 cups, so I think I used a 9x13 pan. This time I inadvertently used my 11x15 pan so I needed more Tater Tots and the soup mixture was spread thinner. It tasted just as good though.)
We sprinkled more Cheddar Cheese on top and baked for 30 minutes at 400 degrees. Then my daughter wanted more cheese, so we added a bit more and put it back in for 5 minutes to melt the cheese.
Ingredients:

Muenster Cheese slices
5-6 cups of frozen Tater Tots
Prepare 1 cup of chicken broth.
Cut chicken into bite sized pieces.
Cook chicken in broth for 12-14 minutes on medium high heat until no longer pink.
Add broccoli and cook 4-5 additional minutes, until tender.
Add soup, milk and 1 cup of Cheddar Cheese
Heat on low until heated through then transfer to baking dish. (9x13 or 11x15)
Top with 5-6 cups of frozen Tater Tots.
Sprinkle with additional Cheddar Cheese
Bake at 400 degrees for 30 minutes.
Add additional cheese (if desired, I didn't do this the first time I made it) and cook for an additional 5 minutes to melt cheese.

This looks SO good! My mom made a tater tot casserole when I was growing up, but it wasn't as good as this looks. lol I'll have to try this one!
