Kids and a Mom in the Kitchen #88:Broccoli Cauliflower Salad

Time for Kids and a Mom in the Kitchen

My oldest daughter was here for a visit this week and I had to make something special for her. Well, actually, we made it together. She was wanting Broccoli Cauliflower Salad for her High School Graduation Party and I just didn't have the ingredients to make it at the time. I have to agree with her, it is quite tasty. I originally found the recipe on allrecipes.com, however, I have tweaked it a bit. You can follow the link to see the original recipe. For our family I follow the amounts, however, when I make it for a fellowship meal, I do double it.


Ingredients:

1 cup broccoli florets
1 cup cauliflower florets
6 slices of bacon
1 cup shredded Cheddar cheese
1 cup mayonnaise
1/2 sugar
2 Tbs lemon juice

First I fried up the bacon...


...and drained it on a paper towel.


Then I crumbled it up.


My daughter made the dressing. She combined the sugar,


mayonnaise,


and lemon juice.



Then we cut the veggies.


We added the bacon,


cheese,


and dressing to the veggies. Then we stirred.


It was placed in the refrigerator until dinner time.


Directions:

1- Fry the bacon, drain, crumble and set aside.
2- Cut the broccoli and cauliflower into florets
3- Combine the sugar, mayonnaise and lemon juice
4- Combine the vegetables, dressing, bacon and cheese in a bowl. Stir.
5- Chill in refrigerator.

  2. This sounds so yummy! I wish I had found this two days sooner. I had tons of leftover fresh broccoli and cauliflower after the holiday weekend. I ended up steaming it up and throwing it in the freezer for a later date but I would have loved to try this. Pinning it for another day!
