Kids and a Mom in the Kitchen: Pumpkin Cookies

Well, daddy had some special time in the kitchen with Amelia yesterday because he has special kitchen time with Tabitha every week when I take the younger two to Story Time. You can check it out at this week's Wordless Wednesday post. Today we had our normal weekly Kids and a Mom in the Kitchen time.  I have been wanting to make pumpkin cookies for a while now, and daddy making the pumpkin pie yesterday made me really really want them. So, today while Hannah was napping, Tabitha, Amelia and I made some yummy Pumpkin Cookies.  I thought I had found this recipe over on the allrecipes.com site, but I didn't have it in my recipe box. I found this recipe that is almost the same.
Lots of ingredients for this one:

Here is what you need:
2 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp salt
1 1/2 cups sugar
1/2 cup butter softened
1 cup pure pumpkin
1 egg
1 tsp vanilla

I had gathered it all together, then I had Tabitha read us what we needed while Amelia helped "measure." At first Tabitha insisted she would do all the reading while Amelia measured and poured and stirred. She changed her mind part way through.


The first step is to mix all the dry ingredients except the sugar
(flour, baking soda, baking powder, cinnamon, nutmeg and salt)
Then set it aside.


Then we beat the sugar and softened butter together.




Then we added the pumpkin

 The egg

 And the vanilla

And mixed it together.

 Then we gradually added the flour mixture.


 At this point the girls were done. They really wanted those beaters. So mom dropped the dough on greased cookie sheets by rounded tablespoons.
They baked in the 350 degree oven for 16 minutes. I checked after 15, but wanted to give them one more minute. The recipe states 15-18 minutes. I never did cool for 2 minutes and remove to a wire rack. I just let them cool and put them on a plate:


The recipe calls for adding a glaze, but we love them plain. In case you are into glaze here is the recipe:
2 cups sifted powdered sugar
3 Tbs milk
1 Tbs melted butter
1 tsp vanilla
Mix in a small bowl til smooth and drizzle over cookies.

  1. I remember when my sister and I were younger and our two aunts would bake with us in the kitchen-Those are some of the greatest memories I have of the holidays :)

    Those pumpkin cookies look delicious!! They might definitely be added to the to-bake list this year :)
