Kids and a Mom in the Kitchen #61: Oat Pancakes

Well, our recipe selections are going to be changing a bit. I have not been feeling up-to-par lately and have decided to try a wheat-free diet. I am focusing on myself, but I am trying to include the children and my husband as much as possible for now. If I see some major improvements we will hopefully all be deleting wheat from our diets. I am reading a book called Weeding out Wheat by Luke and Trisha Gilkerson and I can't wait to share my review with you. I am already becoming convicted that giving up wheat is the necessary thing to do. However, I know have to take some time to find foods and recipes that are wheat-free.

As we usually have pancakes for dinner on Thursdays with our Breakfast For Dinner I figured I would have to find something I could eat too. I found these yummy Oat Pancakes at Food.com.

Ingredients:

1 1/2 cups rolled oats
1/4 tsp salt
1/2 tsp baking powder
1/2 tsp cinnamon
1 egg, lightly beaten
1 cup milk
1/2 tsp vanilla



We started out by grinding the oats down in the Magic Bullet.




Then we combined the oat flour with the salt, baking powder and cinnamon. 

The girls loved the smell.


We then beat the eggs. Then we added the milk and vanilla.


Next we stirred the liquid mixture into the flour mixture.


Then we cooked them.


As this was a new recipe, I only did a single batch. We also made some of our regular pancakes.

Here is a comparison of the two different pancakes on the griddle. The regular pancakes are on the left.


By the way, Hannah helped me make the regular pancakes and she tried valiantly to get the sausages out of the box.


Here is our complete meal. The Oat Pancakes are lighter and they don't have as fine a texture, but they tasted pretty good.
