Delicious Dish Tuesday: Marvelous Menus from the Homemaker's Mentor CD Featuring Italian Breaded Chicken

It has been a while since I have participated in Delicious Dish Tuesday. That would be because I haven't really been making anything new lately. However, there are so many yummy looking recipes in the Homemaker's Mentor CD that I thought it would be great to share some with you. I did share the Frosted Mocha Cookies last week for Kids and a Mom in the Kitchen and there are many other cookie recipes in this wonderful resource.  However, there are a variety of other recipes contained in the collection. Some are complete meals. I decided to try one of the "Amazing Simple Recipes" featuring Breaded Italian Chicken, Cheesy Red Rice with Olives, and Garlic Toast. The vegetables were to be Garden Fresh Green Beans and a Tossed Green Salad. Finishing off the menu was Southern Iced Tea. 

The Breaded Italian Chicken calls for:

3 pounds of boneless skinless chicken
2 1/2 cups homemade bread crumbs
1/2 cup Parmesan cheese
1 Tbs dried Parsley Flakes
1 heaping tsp Italian Seasoning
1 tsp Garlic Salt (I always use Garlic Powder)
1/2 tsp black pepper
You also need melted butter to dip the chicken in. 



I used my Magic Bullet to make my bread crumbs from whole wheat bread. Then I added all the seasonings and stirred. 


I dipped the chicken in the melted butter (about 1 stick of butter melted in the microwave), then I rolled it in the bread crumb mixture. I sprayed my baking pan with cooking spray and baked the chicken for approximately 45 minutes on 375 degrees.


While the chicken was cooking I made the rice. I have to say, I would never have thought of making rice this way. I am so glad I found this recipe. It was delicious.

2 1/2 cups white rice
1 can diced tomatoes with juice (do not drain)
1/4 cup olive oil
1 Tbs fresh minced garlic (I use my garlic press)
1 tsp salt
4 1/2 cups water
1 cup sliced black olives
2 bouillon cubes
1 Tbs parsley flakes 
2 cups shredded Jack and Cheddar


This is so simple. You just put all the ingredients, except the cheese, in the pan and stir. Put it on medium heat and cover. Let cook undisturbed for 18 minutes then remove the lid, stir and add cheese. I did feel it was still too watery after 18 minutes, so I cooked it an additional 5 minutes and it was perfect.


When the chicken came out of the oven I made some Garlic Toast. 

French or Italian Bread Sliced into 1 inch slices
Softened butter
Parmesan Cheese
Garlic Powder
Parsley Flakes


I just spread the bread with the butter, added the Parmesan cheese, garlic powder and parsley flakes. Then I put it under the broiler for about 1 1/2 minutes. I did burn the first batch as 1 minute wasn't quite long enough and I forgot to set the timer when I put it back in. The second batch turned out really well.


I just used canned green beans as I do not have green beans in my garden. I did add some butter and seasoning salt though to change it up a bit. We also didn't do the salad or the iced tea as it was getting so late.

  4. This meals looks delicious! I have tried several breaded chicken recipe only to have the breading fall off. it looks like yours stayed on! I have to remember this recipe and try it soon. Thank you for sharing!
