Kids and a Mom in the Kitchen #112: Pi Day Apple Pie

Last week, Tabitha and I made Cinnamon Roll Pancakes for dinner on Breakfast For Dinner Thursday. If you remember, we had way too much filling left over as I had tripled everything (pancake batter, filling and glaze). The pancake amount was perfect, but the filling and glaze probably could have been kept at a single batch amount. Well, I just have to say, I am glad I did make extra.

Last weekend, on Pi Day, I decided to make an apple pie. However, I decided not to use my regular recipe. I was curious what would happen if I used the filling from the Cinnamon Roll Pancakes in place of the regular sugar mixture.

Here is the recipe for the filling:

1/2 cup butter, melted
3/4 cup packed brown sugar
1 Tbs cinnamon

I had tripled this for the pancakes and had a bunch left. I used 1 cup of leftover filling (so a little more than one batch) with 6 medium apples cut into slices. 


I just stirred it together in a bowl and scooped it into a store bought pie crust. Then I added the extra crust to the top. 


I baked it for 10 minutes in a 450 degree oven, and then lowered it to 350 degrees for an additional 35 minutes. These are the directions from my original apple pie recipe. 


I do have to say, it was quite greasy when it first came out of the oven, because that filling had a lot of butter in it. It actually tasted better after being kept in the refrigerator and warmed in the microwave. I definitely want to play around with this recipe. I enjoyed the brown sugar and extra cinnamon, it just needs less butter.
