Kids and a Mom in the Kitchen #90:Crepes with Apple Cinnamon Filling

Time for Kids and a Mom in the Kitchen

We are continuing to review Lightning Literature Grade 1 from Hewitt Homeschooling with the Schoolhouse Review Crew. The second book we looked at was Madeline by Ludwig Bemelmans. For our Breakfast for Dinner Thursday I decided Amelia could help me make Crepes with Cinnamon Apple Fillling. We found the recipe for Basic Crepes at allrecipes.com and the idea for the filling was found in the reviews of the recipe, written by Tristia 11 years ago.

Apple Cinnamon Filling


Ingredients:
(I quadrupled the recipe to make enough for all of us)

4 apples
1/4 cup butter
1/4 cup powdered sugar
1/2 tsp cinnamon
1/2 tsp nutmeg

Amelia helped to chop the apple into fine pieces.


Then she added the apples and butter to the pan.


And we added the cinnamon,  nutmeg, and powdered sugar.




We fried the mixture up until the apples were soft.


We then set it aside while we made the crepes.

Basic Crepes 


Ingredients:
(This recipe is doubled from the recipe found on allrecipes.com)

2 cups flour
4 eggs
1 cup milk
1 cup water
1/2 tsp salt
1/4 cup butter, melted
2 tsp vanilla (I added this, it wasn't in the original recipe.)

The instructions said to whisk the flour and eggs together. We don't have whisk anymore, so I used electric beaters. This appeared to be a mistake as the batter clung to the beater. 




We gradually added the water and milk while stirring. Then we added the salt and melted butter. We beat it until it was as smooth as we could get it, though there were still quite a few lumps.



We used cooking spray to lightly oil the frying pan and then heated it over med high heat. To cook the crepes does take some time because we can only do one at a time. We poured 1/4 cup of batter onto the griddle and tilted the pan in a circular motion til the batter formed a circle (or close to it). I cooked it for 2 minutes then flipped for another minute and a half.



When we were ready to serve the crepes we placed a small amount of apple cinnamon filling in the center of the crepe, rolled it up and topped with Reddi Whip. We served them with sausage links.
