Kids and a Mom in the Kitchen #60: Pumpkin Chocolate Chip Cookies

It is that time of year again. Time for pumpkin recipes galore. Hubby loves his pumpkin (especially pumpkin pie). Though I haven't made him the pie he keeps begging for yet, the girls and I did make some cookies. For the last few years we have been making these yummy soft pumpkin cookies. I don't even remember where I found the recipe originally. This year I decided to change them up slightly and make them with chocolate chips. They were really good!

Ingredients:

2 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp salt

1 1/2 cups sugar
1/2 cup butter, softened
1 cup pumpkin
1 egg
1 tsp vanilla
1 cup chocolate chips


First we combined the dry ingredients (except the sugar).  The girls alternated holding the bowl and stirring. I love it when they cooperate so well.


We set the flour mixture aside and creamed the sugar and the butter.



Then we added the pumpkin, egg and vanilla.


Next we mixed in the flour mixture. 


Finally we stirred in the chocolate chips.

I let the girls help grease the cookie sheet and...


...they also helped scoop the dough onto the cookie sheets (about a heaping tablespoon for each).



We baked them at 350° for 16 minutes. The recommended time is 15-18 minutes.
