From My Kitchen: Cheesy Broccoli Meat Pie

Last week I wanted to do something different for dinner. As I was sitting on the couch I thought of using rice to make a crust for a meat and veggie mixture pie. This is what I came up with. Hubby says it is a "keeper" recipe.

Ingredients:
Cooked Rice
20 oz pkg Ground Turkey
1 can cream of broccoli soup (ignore the second can in the picture, I thought I was going to need it)
3 cups raw broccoli 
Shredded Cheddar Cheese
Minced onion
Garlic powder
Pepper


I made extra rice because I wasn't sure exactly how much it was going to take. Half of this would probably do. This is how I make my rice. 
Place 4 cups cold water in sauce pan.
Add 2 cups rice, 2 Tbs butter, 2 tsp salt. 
Bring to a boil. 
Once it is boiling, stir once, cover with tight fitting lid, turn stove to low and simmer for 20 minutes. 


While the rice was cooking I fried up the turkey and minced onion. I do not measure the minced onion, I just sprinkle a whole bunch on, as you can see in the following picture. I also sprinkled on some ground pepper and garlic.



At the same time cook the broccoli by putting it in a pan with some water. Bring the water to a boil, reduce heat to medium, cover and cook for 10 minutes.


When the turkey is fully cooked, drain grease if necessary.


Add soup.


Add 1/2 cup cheese


Add cooked, drained broccoli and stir it all together.


When rice is done it will be nice and sticky. Allow it to cool off for a few minutes and then press enough into a pie dish sprayed with cooking spray to form a crust. 


Add meat mixture.


Sprinkle with more cheese.


Cook at 350 degrees for 25 minutes.

  4. This looks really good too! We don't do ground turkey (my husband refuses, lol) but with ground beef it would be yummy too! Thanks for linking up!
