Kids and a Mom in the Kitchen #38: No Bake Mint Oreo Meltaways

Time for Kids and a Mom in the Kitchen

In these week's leading up to St.Patrick's Day we are again focusing on one color of the rainbow at a time. This week I would like to share this wonderfully addicting dessert I found while hopping around last week. It was perfect for our focus on the color green. I found No Bake Mint Oreo Meltaways over at Lemon Tree Dwellings. These would be a great snack for St. Patrick's Day coming up this weekend. As an added bonus, they are very easy to make.

No Bake Mint Oreo Meltaways



Crust:
1 1/4 cups finely crushed Cool Mint Oreos (about 15) 
1/3 cups butter, softened

Filling:
1 1/2 cups powdered sugar
1/3 cup butter, softened
1 tbs milk
4 tbs creme de menthe syrup

Topping Drizzle:
1/4 cup chocolate chips, melted

 My oldest daughter was visiting last weekend when we made these. She helped make the crust and these are the only pictures I could get her to let me take of her.

She measured out the butter and melted it in the microwave.

While it was melting she crushed the Oreos in the Magic Bullet.


Then we mixed them together. It wasn't mixing that well at first so I ended up putting it in the microwave for a few more seconds. I guess the butter wasn't quite softened enough.



Then we pressed it into the bottom of an ungreased 9x9 pan and refrigerated it until firm.


Later in the day the younger children and I made the filling. 
We combined the powdered sugar, 1/3 cup softened butter, milk and creme de menthe.



Everybody helped beat the ingredients until it was light and fluffy. Daddy even helped baby Harold mix it.



Then I spread it on the cookie crumb crust.


I drizzled the melted chocolate chips onto the top. As I don't really have the proper tools for drizzling I ended up with a bunch of clumps of chocolate, so I just used the back of the spoon to create a marbled effect, not quite what the originals looked like, but I think it is pretty, and it tastes just as good I am sure.



We put it in the refrigerator so it would firm up. The recipe said about 2 hours. As it was sort of late when we were making these we just left them in over night.


And enjoyed them with lunch the next day.



Warning, these are very sweet and rich, but sooo addicting.

  1. Combine finely crushed Oreos and 1/3 cup softened butter.
  2. Press onto the bottom of an ungreased 9x9 pan. Refrigerate until firm.
  3. Combine powdered sugar, 1/3 cup softened butter, milk and creme de menthe. Beat on medium speed until light and fluffy. 
  4. Spread over cookie crumb crust.
  5. Melt chocolate chips in the microwave and drizzle over the top.
  6. Refrigerate until firm, approximately 2 hours.
  7. Cut into bars and enjoy. 
  8. Store in the refrigerator.
