Kids and a Mom in the Kitchen: Pumpkin Cookies Again

We spent time this week, and are going to be spending time next week, focusing on colors. Two days this week we focused on red and then we focused on orange. So I wanted to pick something orange for us to bake. While these cookies don't really look orange, the pumpkin that goes into them is orange.  (I actually started writing this post a couple of days ago, but fussy baby Harold hasn't let me get much done). We made these cookies back in November, but they were the best thing I could come up with for orange.

Tabitha was unable to help me read the ingredients this week because I had written this recipe card in cursive a while back. But after I gathered the ingredients the girls helped as usual.

Dry Ingredients-Combine in bowl and set aside:
2 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp salt

And we also need:
1 1/2 cups sugar
1/2 cup butter softened
1 cup pure pumpkin
1 egg
1 tsp vanilla



The butter needed to be softened a bit so we could cream it with the sugar.



While the butter was in the microwave we combined the dry ingredients, once again discussing that we need two 1/2 cups or teaspoons to make 1 whole. 


Then we creamed the butter and sugar.


The next step was to add the egg,

pumpkin and vanilla.

See, now it is orange.


Then we slowly add the flour mixture.

Once again the girls were done when we were finished mixing and I had to place the cookie dough on the cookie sheet by myself. The girls wanted to go outside and play.



It was a nice surprise for daddy.
