Kids and a Mom in the Kitchen #73: Chocolate Rocks

Time for Kids and a Mom in the Kitchen

This week I used another recipe I had found last week when looking for a recipe to go with the rock cycle. I found it over at Tastebook. It didn't really have anything to do with the rock cycle, but it showed up in the search because I searched for "Chocolate Rocks." These were quite tasty, and as you can see, they have quite a few healthy ingredients.

Ingredients:

2 cups whole wheat flour
1 cup rolled oats
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
1/2 cup (1 stick) unsalted butter
1 1/2 cups packed dark brown sugar
1/2 cup apple butter
2 large eggs
1 tsp vanilla
1 1/2 cups bittersweet or semisweet chocolate chips
1 cup walnut pieces
3/4 cup raisins



We combined the flour, oats, cinnamon, baking soda and salt.





Then we melted the butter in a pan over medium heat.



After the butter was melted we stirred in the brown sugar, apple butter, eggs and vanilla.


Tabitha loves cracking the eggs. She is getting pretty good at it too.



We stirred until it was combined.


Then we added the flour mixture.


Last we added the chocolate chips, walnut pieces and raisins.


The dough needs to go in the refrigerator for 30 min to 1 hour. We actually left it in overnight because it was bedtime. I confess, I hadn't read the recipe all the way through, so I didn't know we were going to have to let it sit for a half an hour. 

This morning I scooped out the dough (about a heaping tablespoon per cookie) and placed it on the cookie sheet. We baked two cookie sheets at the same time, one on the bottom rack and one on the top. We baked them for 14 minutes at 375 degrees, switching them halfway.
