Kids and a Mom in the Kitchen #58: Apple Crisp Cookies

I have been wanting to attempt this recipe for a while. However, every time we bought apples to make these cookies the children would finish the apples before I could get a chance to make the cookies. It worked out well, as I tend to like making apple recipes in the fall anyway.  Really, all I did to create this recipe is I substituted chopped apple for chocolate chips, added cinnamon, and sprinkled on a apple crisp topping.

Cookie Ingredients:

1/2 cup butter, softened
1/2 cup shortening
3/4 cup granulated sugar
3/4 cup brown sugar, packed
2 eggs
1 tsp vanilla
2 1/4 cups flour
1 tsp baking soda
1/2 tsp salt
1 Tbs cinnamon
2 cups chopped apples


After we softened the butter in the microwave, we creamed it with the shortening, sugars, eggs and vanilla. 


We set that mixture aside and combined the flour, baking soda, salt and cinnamon.
Then we added the flour mixture to the sugar mixture. I chopped the apples and we stirred them in. It actually didn't take 3 apples to get 2 cups of chopped apples, but I wasn't sure how many it would take when I took the first picture. It will depend on the size of the apples how many you will need. 2 medium apples will probably be sufficient. 


Here's the dough, all mixed and ready to bake.


Topping Ingredients:
1/2 cup flour
1/2 cup quick cooking oats
1/2 cup brown sugar, packed
1/8 tsp baking powder
1/8 tsp baking soda
1/4 cup butter, melted 


We melted the butter in the microwave and added it to the rest of the ingredients. Then we stirred it all together.


Drop by Tbs onto cookie sheet and flatten a bit. I tried using a spoon, a fork and my fingers. This was a little tricky, but it needs to be spread out a bit to add the topping. 


Sprinkle 1 tsp of topping on each cookie.


Bake in a 375° oven for 9-10 minutes. Let cool on the cookie sheet for 3 minutes, then transfer to counter to cool completely.
