Kids and a Mom in the Kitchen #27: Cornbread Muffin Surprise

This week we started our Ll: Leaf Unit. I was a bit unsure of what we could make in the kitchen this week. I really like to have our recipes tie in with our lessons if possible. I saw this neat idea a couple of years ago through the Muffin Tin Monday linky and was reminded of it last week when I was trying to decide on our "L" muffin tin. Back in 2010 Muffin Tin Mom was still suggesting themes each week for Muffin Tin Monday. The theme had been "Trees, Leaves and Harvest Time."  Lizz from A Little Bit of This and That had shared a recipe she found here for Broccoli Tree Corn Muffins. I thought they would be a great recipe for the girls and I do make together. And for a change it isn't a sugar filled food.
Now, onto the recipe!

Broccoli Tree Corn Muffins
The original idea had a special recipe for the corn muffins and the Lizz from A Little Bit of This and That just used Jiffy Corn Muffin Mix. We had some Martha White Self-Rising Buttermilk Corn Meal Mix, so we used the recipe on the back for the Cornbread Muffins

 Yes, Tabitha helped read the recipe again. I really do appreciate all the learning opportunities in the kitchen.


We needed:
1 large egg
1 1/3 cups milk
1/4 cup Vegetable Oil
2 Cups of the Corn Meal Mix


Tabitha cracked the egg into the bowl.


Amelia beat the egg.


Then we added the milk,


oil, 


and corn meal mix.



We beat the mixture until smooth. 
We had greased the muffin tins with cooking spray and heated them up in the 450 degree oven for 7 minutes. I am not sure if we heated them too long, but the cooking spray had turned brown, so we wiped it out and resprayed the tins. Then I put 1 Tbs of mix in each cup.


I put a broccoli floret in each one.


Then I covered them with more batter. They were baked for 15-20 minutes.



Broccoli Tree Cornbread Muffins:


They were okay, but a little dry and bland. It was my first time trying cornbread. I think I may try the original recipe next time. She used olive oil and added maple syrup.
