Tots and Me

Wow, Thursday again already!  This week I was able to make the meal I wanted to make last week. It was my first time trying out a recipe I found over at allrecipes.com.  I really love this site, have found many favorite meals here.  I was looking for something sort of simple, but different.  We always seem to have pancakes if we are having breakfast for dinner.  That is one reason I started this linkup.  I was figuring I would be more creative.  Anyway, this casserole needed to be put together and refrigerated "overnight." Which I took to mean approximately 8 hours.  It was very simple, not a lot of ingredients.

  • 18 (1 ounce) slices white bread, cubed
  • 8 ounces cooked ham, cubed
  • 2 cups shredded Cheddar cheese
  • 1 1/2 cups diced Swiss cheese
  • 6 eggs
  • 3 1/2 cups milk
  • 1/2 teaspoon onion powder
  • 2 cups crushed cornflakes cereal
  • 1/2 cup butter, melted

I used less bread but everything else was the same.

  1. Lightly grease a 9x13 inch baking dish. Line the bottom of the dish with half the bread cubes. Sprinkle with ham, Cheddar cheese, and Swiss cheese, and top with remaining bread. In a bowl, beat together the eggs, milk, and onion powder. Pour evenly over bread. Cover, and refrigerate overnight.
  2. Preheat oven to 375 degrees F (190 degrees C). In a small bowl, blend the crushed cornflakes and melted butter. Spread evenly over the casserole.
  3. Bake 40 minutes in the preheated oven, or until bubbly and golden brown. Let stand 5 minutes before serving.

We found it needed almost double the cooking time.  I do wonder if it is my baking dish, because I have that problem with bread pudding as well, too runny.  I actually wasn't as fond of this recipe as my hubby was.  I guess I am just not crazy about the soggy bread.   The girls didn't want it.  I had to beg them to eat bites before I would give them the sprouts and avocado they wanted.  Sounds like something kids beg for, doesn't it? Anyway, I am going to try it again in a different baking dish.  As hubby has informed the girls it will get made again.
